Consider Phlebas
The Player of Games
Use of Weapons
Excession
Inversions
Gone to Windward
These books deal with "The Culture" (to a greater or lesser degree). They were written in the order above but can be read in any order. However, for best enjoyment read TPoG before Excession otherwise you won't really appreciate what's going on in Excession half as well.
And ensure you have read either TPoG or Excession before you read Inversions.
He has also written in SciFi:
Against A Dark Background - very good
Feersum Enjinn - annoyingly hard to read because of the "dyslexic" bits
In non-SF, you might as well start with The Wasp Factory - he did. But be warned, it's gruesome.
